Chocolate Hearts
Chocolate Heart
  • 2 1/4 cups unblanched almonds
  • 3 squares unsweetened chocolate
  • 2-4 tbls. flour
  • 1 1/4 cups sugar
  • 1 tsp. cinnamon
  • 3 egg whites

Using fine blades, grind nuts and chocolate. Mix sugar, cinnamon, and flour with ground mixture. Beat egg whites stiff and add to nut mixture. Mix and work together until it holds its shape. Sprinkle sugar rather heavily on pastry cloth and roll dough to 1/8-1/4 inch thick. Cut out hearts and place on sugar covered cookie sheet. Let stand at least three hours, or overnight. Bake at 275 degrees for 15-20 minutes.

Note: Amount of flour depends on size of eggs. (I leave mine overnight).
